Ashford Castle in County of Mayo, Ireland

A thirteenth century castle buried deep in a wooded parkland sounds like the setting for a fairy tale, but really it is home to the exclusive Ashford Castle. Standing impressively on the shores of Lough Corrib in County Mayo, Ireland, Ashford Castle is a monument to a fascinating and timeless history. Once the Guinness Family estate, the Castle has since opened its doors as an exclusive luxury hotel in 1939. Where else could one spend the morning learning how to fly a hawk at the School of Falconry, escape to the Walled Garden for a romantic picnic, and relax in the afternoon with a soothing massage at the spa? Filled with family heirlooms, rich furnishings and priceless objets d'art, Ashford presents the chance to enjoy the splendor of a bygone era in comfort and style.

Follow the pursuits of a true country gentleman when at Ashford Castle. The 350 acre estate offers a variety of activities to entice guests with the great outdoors. Explore the beautiful wooded countryside between the shores of Lough Corrib and Lough Mask, trek into the mountains of Connemara towards the West on horseback, or find Ireland's national pastime of golf alive and well on the estate's 9-hole, 2996-yard parkland course. After such diversions, enjoy a treatment or two at the spa before dressing for dinner. Enjoy one of four unique dining experiences, each with their own inimitable style and ambiance. Had 2 days away to this. excellent resort in November to celebrate my birthday .I had heard how excellent it was and it totally excelled my expectations. The service from we arrived at the gate to checking in by David was excellent and given a guided tour of the hotel and all its amenities .Dinner was in the George v restaurant and again service was excellent and the food superb one of the best I ever have had .One the highlight was the walk with the Irish wolf hounds in the forest and meeting the hotel robin it really added to the stay .Excellence all round cant wait to visit again a huge thank you to all the staff for making our stay so enjoyable .

Yes, Ashford Castle is a wonderful venue, and we were pleased with our stay, but for the price I would have liked all of the food on each occasion and at each restaurant, to have been excellent.... It was not............Start with Ashford Lodge on the Estate also, dinner first night Friday, ambiance and staff just wonderful (without exception)!, both mains were overcooked duck, carrot, orange, pine and wild turbot, pumpkin, fennel, seaweed beurre blanc - just not good enough. My turbot was replaced with a freshly cooked pasta dish (starter size) it was delish (wild mushroom, sea truffle fresh pasta) my evening just got better, it was just so good........someone in that kitchen knows how to cook thank goodness. It was also appreciated that the hotel took us over to The Lodge and collected us again. Breakfast Saturday morning, strange, well I simply had smoked salmon and scrambled egg, fine cannot really go wrong here from the buffet. However the adviser asked for full Irish, easy over egg, what came was a single fried egg on a plate (alone and sad: sunny side up) waiting boy looked confused, back to the kitchen and this was corrected - however the bacon was inedible altogether I was advised, it also looked awful I must add. Great walks on Saturday through the Estate and yes we returned to luncheon at the Lodge and savored once again the wonderful Sauvignon Blanc from their South African Vineyard, very relaxing lunch, cured salmon and monkfish in panko bread crumbs with delightful dip......and wonderful Irish Coffees best ever! Little rest before dinner in the George V.....It was a special occasion for us and I would have liked a nice little table for two in an intimate corner, did not happen, we were so close to a family of four, in the next table that the waiters/waitresses and sommelier Phillip had real difficulty preforming their duties the way they would have wished and it was slightly embarrassing to be honest. This saddened me. The amuse bouche were the best bits of the meal TBH.... Starter of crab ravioli in squid ink dreadful tough and horrible, pasta too thick therefore crab was cloggy, even the waiter said this was not a good looking plate. .Again my John Dory was overcooked sous vide too long who knows .............it will not stop me going back another time but I would like some confirmation that food will be top notch next time, perhaps head chef on holiday to warmer climes.........I just wonder what table Mrs Tollman would have been allocated for her special anniversary...............

We stayed here with family as a birthday celebration. It truly is a fantastic hotel where the staff played a large part in making our stay special. Rooms stunning, setting stunning. We were given lovely rooms with a view over the lough. We ate in both restaurants as both were excellent with the George V stealing the show. We also had afternoon tea which was sublime. We did the falconry tour and I would strongly recommend this we had Joe as our guide and he was really enthusiastic, as good an ambassador for the falconry they could ever hope for. The walk with the falcons were much better than I expected or could have hoped for. We aso did the Lough Corrib cruise and this was fantastic and definately recommended. This is a fantastic hotel and it shows that the staff are happy to work there with their “new” employer – the Red Carnation Group have done a stunning job with this hotel which has benefitted not only the staying guest but the community.

This is one of the most incredible and memorable places I have been. I was fortunate to be invited to attend a wedding here but will certainly return with my children later in life. There’s something for everyone- the food is divine, the service outstanding. I even asked the bride and groom if they hired temporary staff themselves and they said no, this was all part of the ashford castle service. I can not recommend this venue enough... go!

Our family had a fantastic time at Ashford Castle. The highlight was definitely the hawk walk. The people at the Falconry school are marvelous and were great helping my twins carry and launch the hawks. The Irish wolfhounds were also a highlight as well as afternoon tea. We definitely need to return and visit again.
