I think it would be great if this was the beginning of a game changer! But as they said on the video, its fairly easy to alter an pdf document, so I don't see this as becoming the primary source of passport proof, but could be a great fallback if someone lost their passport. Maybe someday it could become more accepted.
I just got an iPad for Christmas and am still learning how to use it. What would be some different ways to transfer & store my passport on the iPad?

I have seen boarding passes copied on to iPads. The people just swipe their iPad with the code over the check in device and get the green light to pass. I thought that was pretty neat. I am not sure if putting your passport on your iPad would be a good idea. What if you lose your iPad? Furthermore, as you said, it is fairly easy to alter pfd documents. It looks like the 21st century is moving too fast for me.... I still don't have an iPad.
