A very memorable lunch in the garden!! The food was spectacular and our waiter Fausto was so lovely. I recommend if you are in Puglia that you make time for lunch at the Paragon.

My wife and I have stayed at Paragon four or five times, and it’s become a must-stop whenever we travel to Italy. Each room is uniquely designed, transporting you to a bygone era while remaining comfortable and inviting. The result is a striking mix of history, character, and style that feels both grand and personal. And the beds are beyond description. In a word divine! What truly sets Paragon apart is its people. The staff go beyond excellent service, engaging guests in genuine conversation and making every stay memorable. And then there’s the restaurant. It’s simply the best. No matter how much time we spend exploring the city, we always return to Paragon for dinner. The food, atmosphere, and service make it the highlight of every evening. In short: book it now. Paragon is one of those rare places that exceeds expectations every time.

Paragon 700 is a beautiful hotel in a fantastic location. The rooms are stunning, the bar is excellent, and many of the staff, particularly the front-of-house and bar team, were friendly and helpful throughout our stay. Unfortunately, our final day left a disappointing lasting impression. Before arrival and several times during our stay, we asked about late check-out or shower facilities as our flight wasn’t until 10pm. Despite being told repeatedly that someone would check, no solution was offered other than an ice-cold poolside shower where we couldn’t even use soap. I had also mentioned several times that this trip was to celebrate my husband’s 50th birthday, but it wasn’t acknowledged at all. What disappointed me most was that when these issues were raised, there was no attempt to make things right. Even a small gesture or acknowledgement of the inconvenience would have been appreciated. A wonderful hotel in many ways, but unfortunately the handling of our departure day left us feeling let down.

I was expecting a five star experience. Instead what we got was a tiny hot room with one small window that didn’t open (the “deluxe room”). It was akin to a cloakroom rather than a guest bedroom. It was so small and hot we were unable to hang clothes and had to step over suitcases. The bedroom is divided by a steep hazardous step. Please look at the mirror as an indication of “luxury”. Another feature was the “wet room” (bathroom), aptly named because on switching on the shower the whole room floods including the floor around the toilet and sink. No ventilation, no way to open the window. So essentially a hot sauna room with a lethally wet floor that spills into the already boiling bedroom with a steep step down into the bedroom so you can slip and break your neck. The bathroom shower is either freezing or boiling hot. The sink just hot water. My husband asked for an extra key and was shockingly told NO he couldn’t have one and therefore had to wait behind a locked corridor door until twenty minutes later another guest exited. We saw a number of guests waiting behind said door. The pool is so cold the only things using it are pigeons!! Restaurant so good it was always empty!! Like other reviews have said, when I mentioned these things to management we were met with defensiveness and abrasion. “Paragon 700 is a hotel that prioritizes aesthetics over customer service” from another review sums up this place. Horrific. We travel extensively (see all my reviews) – this is one of the worst hotels I have ever stayed in. If management can be bothered to reply to this post (which they won’t) you will see what kind of odd blame game culture we were dealing with. This place is over 600 euro per night. You would have to pay ME to stay there again. Laughable.
