Our evening at the Canyon to Coup dinner at the Fairmont Grand Del Mar was absolutely unforgettable. From the moment we arrived, we were immersed in an experience that felt equal parts luxurious, creative, and deeply thoughtful. The menu was incredible. Every course was beautifully executed, rich with flavor, and artfully presented. The culinary team showcased such range and finesse, with dishes that celebrated seasonal ingredients and highlighted a sophisticated, imaginative approach to food. Each bite felt intentional and full of story. The drinks were equally impressive. Jason Sorge, the creative director of beverage, crafted a stunning beverage pairing experience that perfectly complemented the food. Every cocktail was balanced, nuanced, and unique. What stood out even more was Jason’s thoughtful attention to one of our guests who doesn’t drink alcohol… he created bespoke zero-proof cocktails that were just as fun, elegant, and delicious as the others. It made such a difference, and we were all so grateful for the care behind that gesture. A special thank you to Ulrich von Son, associate director, who provided exceptional service throughout the evening. His warm professionalism, attention to detail, and effortless hospitality elevated the experience for our entire group. Ulrich anticipated every need and made us feel truly taken care of-his presence was a huge part of what made the night feel so personal and memorable. The Canyon to Coup dinner is not just a meal- it’s an experience rooted in creativity, passion, and genuine hospitality. If you have the chance to attend, don’t hesitate. It’s one of the most special dining experiences you’ll find in San Diego.

The Grand remains a terrific hotel with a stellar staff, unmatched facilities and superb food. This has been our “go to” resort for decades, and we always have a great time! Hats off to the Amaya wait staff, especially Vladimir!

The food and drinks are amazing! We went to the Canyon to Coupe and it was so fantastic!! An exquisite experience that we would 100% do again. Jason (the cocktail master) and the chef came up with such an awesome menu, it was delicious.

I stayed at this hotel for just one night and had a very good experience. I arrived early and spent some time working in the lobby, which was quiet and beautifully designed. About two hours before the official check-in time, I asked the front desk if my room was ready, and they told me it was—I was able to check in early! The room was clean and beautifully decorated. The resort itself is very nice and scenic. I also had breakfast at their café and really enjoyed it.

The hotel is beautiful, service impeccable. The Hotel is only 1 1/2 hours from home but feels like I’ve been transported to vacation land. It was treat to pick up my electric car and find it had been fully charged!
