We recently had a 5 night stay at Fouquet’s with close friends. We booked a last minute trip to St. Barts and truth be told it was one of the few 5 star hotels that had availability. Literally booked our stay 2 weeks out. Full disclosure, we usually stay at Cheval Blanc, and our friends usually rent villas through Eden Roc, so this was going to be a new experience for all of us. And to be honest, we were a little skeptical. Full disclosure, my husband and I had stayed at this hotel when it was the Carl Gustaf on our honeymoon 30 years ago. Didn’t love it, and funny enough, we actually checked out and ended up at Le Toiny. So we were definitely apprehensive. But we had been reassured by our travel agent that a lot had changed especially under the Fouquets ownership. We were also a little hesitant because the location was at the top of town, and no real beach. The plunge pools on all the terraces of the suites, are just that. The beach is walkable. But we drove the few minutes down. Not a big deal. But, definitely was missing the beach access of Cheval Blanc. Bottom line, the fact that we decided to return was a surprise to us as well. Yes there still isn’t a central pool for guests. Still just personal plunge pools for each suite. But that was the only remnant of our past stay in 1996. Fast forward to 2026…and I have to say a lot, and I mean a lot has changed. For the better. The suites are fantastic. We were in a prestige suite. In case you’re wondering the difference between the deluxe and prestige suite- from a space/decor standpoint, no difference. Just a slightly higher view. The equivalent of a floor or two if this was hotel building. But the suites are all outdoor freestanding structures tiered on a hill, connected by one main outdoor staircase to the main reception area. Back to the actual suite itself. Very spacious. Large sitting area. And separate bedroom. Loved the stylish island, retro French decor. Yet had all the modern tech for everything else. Very well thought out. Plenty of closet space. The bathroom was not huge but very sleek. With double vanity. Large marble shower. Loved the ByRedo products. The decor of our suite, was very much on par with the caliber of Cheval Blanc. Chic, warm but still modern and hi tech. Service was pretty good. It’s a small more boutique experience. Beef Bar is the main attraction. So we were concerned we would feel like we were staying at a restaurant with rooms. Rather than a 5 star hotel. But as each day passed those fears fell away. The spa is beyond stellar. One of the absolute best I have been to anywhere. I really mean that. It was fabulous. As much as I love Cheval Blanc, this spa is the frontrunner in my opinion. Breakfast was delicious. Although the service does need improvement. Everyone was very nice. But we often experienced long delays with our order, and very few guests as an excuse. That seemed to be problem throughout our stay unfortunately. Very inconsistent. Some of the staff just seemed to lack experience or proper training. While I wouldn’t say it affected our overall experience, we were spending close to $3800 per night. So as small and boutique as this Fouquets property is, this was not a boutique hotel price point. However, the staff throughout the rest of the hotel was fantastic. The front desk, the spa, housekeeping. Exceptional. Couldn’t do enough to make our stay perfect in every way. We never spent any real beach time at Shellona. It’s really about the restaurant. Not much of a beach. Small stretch of sand and because the beaches in St Bart are public, it’s not quite the most ideal set up. But we were told that Shellona will be replaced, redesigned and debut as Lou Lou from St Tropez. So that’s exciting! One of our fears about the hotel was its location. Being in town, and not on a beach. We were so wrong. It was awesome. Beyond awesome actually. Our view of the Gustavia harbor from our suites and the restaurant were magnificent. On foot you were in town within 10 minutes. By car, in 2 minutes. We all loved that. I have to say, we all thought this stay would be a one off and didn’t have the highest expectations. But, we all loved it. We truly did and would come back again. Under the Fouquets banner, the former Carl Gustaf is definitely having a major moment. While I do wish it had more property for a true pool area for its guests, and a more traditional beach experience, it definitely offers a lot. I give it credit that it doesn’t try to be something it’s not. Instead it’s forging its own stamp on the hotel scene. It’s small. But it’s a big star waiting for its close up. Wonderful stay overall. Spent 3 nights recently and realised afterwards we should’ve spent our entire trip here. Staff are really professional and on point. Airport transfers, pick up at night after dinner from Le Cafe, housekeeping, concierge and reception. All staff were very personable and detail orientated. Breakfast with a view was sublime. It’s great to have access to Shell beach. Hotel is in Gustavia so close to shops and restaurants. Very walkable in flats lol. You’ll get your steps in easy! Loved our short time here. Highly recommend and hope to return.

We stayed at Le Carl Gustaf in April 2024, and it was truly a magical escape. The hotel overlooks the bay of Gustavia with breathtaking views, a peaceful atmosphere, and discreet elegance at every turn. From the moment we arrived, we were welcomed with warmth and exceptional attention to detail. Everything is thoughtfully curated to offer a tailor-made experience, blending luxury, comfort, and authenticity. Although my suitcase didn’t arrive on the first day, the staff went above and beyond to make sure I had everything I needed. Their kindness, efficiency, and genuine care made all the difference and allowed us to fully enjoy our stay from the very beginning. A heartfelt thank you to Loana, Benjamin, Cléo, and Clémence, who made our stay even more special with their attentiveness and professionalism. Their thoughtful presence truly left a lasting impression. The experience at Le Carl Gustaf was outstanding! The staff is knowledgeable, friendly, and true professionals, from the valet, to the front desk, restaurant staff, and housekeeping. My room was spacious, the large bathroom was loaded with amenities, and I love the remote controlled curtains. This was not my first stay at this delightful hotel and I cannot wait to return.

This hotel was truly the best experience I’ve ever had in Saint Barth! From the warm welcome to the incredibly friendly and attentive staff, every detail was perfect. The rooms are absolutely stunning, and having a private pool right in the room was an amazing touch. Can’t recommend it enough – it made our trip unforgettable!
